 Vegetarian Sushi

Vegetarian Sushi

2 C rice
2 C water
½ C sushi seasoning *

*I find it easier just to buy the sushi seasoning but if it’s not available you can make your own, for 2 C rice you will need
60ml rice vinegar (or malt vinegar ‘Mitsukan’)
1 ½ tblsp caster sugar
1 ½ tsp salt
Combine in a saucepan over heat until the sugar dissolves

To cook the sushi rice first you need to rinse the rice well, until the water runs clear (at first the water will be cloudy while the starch is being washed away) 
Then place the rinsed drained rice in rice cooker or saucepan with the water (equal parts) and cook covered until water is absorbed.
Once rice is cooked put it in a shallow dish and sprinkle with sushi seasoning (the vinegar in the seasoning stops your avocado etc from browning) Don't stir the rice but instead move your wooden spoon over the rice mixing it slightly as you go and occasionally turning it over. This step is supposed to be done while the rice is being fanned so it cools. If you have a second set of hands around ask them to grab something to fan the rice for you. When I'm cooking solo I fan the rice then stop and mix, then fan again etc.

The rice is ready.

Vegetarian Sushi

8-10 Nori (seaweed) sheets
fillings of your choice, I used...
Marinated tofu
Snow pea sprouts
Cucumber
Avocado
Roasted sweet potato
Japanese mayonnaise

Place your nori on your sushi mat. Spread rice over nori leaving a gap at the top to join when rolled then place your chosen filling in the middle and roll. (See photos below)

Serve with soy sauce and pickled ginger (optional wasabi)
