 Vegetable & Barley Soup

Vegetable & Barley Soup
serves 8

2 Tblsp olive oil
2 onions, diced
2 carrots, chopped
4 celery stalks, chopped
2 large zucchini (courgettes), chopped
2 400g (14oz) tins crushed tomatoes 
1C pearl barley
12C vegetable stock
Optional 1/4 C chopped parsley

Heat the oil in a large soup pot. Add onion, carrot and celery and cook until the onions are tender, approx 10 minutes.

Add the tin tomatoes, zucchini & vegetable stick and bring to the boil.

Add the barley and simmer partially covered for approximately 40 minutes or until the barley is tender.

Add parsley if you wish. Serve and enjoy.
