Split Pea, Lemon & Vegetable Soup
Split Pea, Lemon & Vegetable Soup
3 tblsp vegetable oil
2 onions, peeled and diced
1 tsp cumin seeds
1 C yellow split peas, rinsed thoroughly
1/4 tsp cayenne pepper or chilli powder
6 C water
2 tsp vegetable stock powder (added to water)
1/4 lemon
3 potatoes
2 carrots
1/2 tsp tumeric, ground
salt & pepper to taste
Heat oil in a large soup pot, add onions and sauté over low heat until translucent. Add cumin seeds and cook for a further 3 mins.
Add washed, drained split peas, cayenne or chilli and sauté briefly.
Pour in water/stock powder, 1/4 lemon (skin and all) and vegetables.
Bring soup to the boil and simmer for 30 mins or until vegetables are tender, stirring occasionally.
Add tumeric and cook for a further 5 mins.
Remove from heat and blend until smooth. Add salt and pepper to taste.
Enjoy.
