Mini Christmas Puddings

Makes approx 50 mini puddings

1kg store bought Christmas Fruit Cake
250g stick cream cheese
500g dark chocolate
250g white chocolate
small packet red & green glace cherries

Crumble the cake into a large mixing bowl, add softened cream cheese and combine. This is easier if you use your hands. Roll mixture into balls and refrigerate while you prepare your chocolate.

Melt dark chocolate over a double boiler and roll cake balls in the chocolate. Refrigerate until set.

Melt white chocolate and spoon on the top of cold mini puddings and decorate with small pieces of glace cherries.

These keep for weeks in a air tight container in the fridge....if they last that long ;)
