 Marinated Mushroom Burgers

Marinated Mushroom Burgers

6 large flat mushrooms
1/3 C olive oil
1 tsp crushed garlic
1 tsp dried thyme (or 1 tblsp fresh thyme)
6 wholemeal rolls
Toppings of your choice, I used tomato chutney, vegan mayonnaise, tomato, lettuce and alfalfa sprouts.

Combine marinade ingredients and brush over mushrooms. Place in a ceramic dish covered in cling wrap and refrigerate for 1 hour.

In a non stick pan cook mushrooms for 3-5mins on each side, you may need a little extra olive oil if you are using very large mushrooms.

Place mushrooms on the rolls with your choice of toppings. Serve with salad or potato wedges. Enjoy.
