 Indian Spiced Cauliflower Soup (vegan)

Indian Spiced Cauliflower Soup (vegan)
Serves 8

2 Tblsp vegetable oil
2 brown onion, coarsely chopped
4 tsp minced garlic
2 Tblsp minced ginger
4 Tblsp mild curry paste (I used Tikka)
2 large cauliflower, cut into florets
3 large potato, peeled, coarsely chopped
2 litre (8 cups) vegetable stock
500ml vegan cream cheese

Heat oil in a large soup pot. Add onion, garlic and ginger and cook stirring until onions soften. Add curry paste and cook for a further minute.

Add cauliflower, potato and vegetable stock. Bring to the boil and simmer for 20 - 30 minutes.

Remove from heat and stir through cream cheese.

Allow to cool then transfer to a blender and blend in batches until smooth and creamy.
