Hummus & Salad on Wholegrain Crisp-bread

This light, healthy meal was inspired by the dvd Engine 2 Kitchen Rescue which is aimed at helping people transition to a healthy plant based diet.

To make the hummus 
1 tin chickpeas
2 cloves of garlic
2-3 tblsp lemon juice
1 tsp tamari (soy sauce)
water until it reaches the right consistency (approx 3 tblsp)

Place all ingredients in a food processor or blender and blend until smooth.

I used Ryvita wholegrain crisp-breads, spread it with hummus and topped with cucumber, alfalfa, tomato and seasoned with salt & pepper. It was delicious.
