Curried Cabbage with Split Peas
Curried Cabbage with Split Peas
1 & 1/2 C yellow split peas
2 tblsp vegetable oil
2 tsp yellow mustard seeds
2 tsp cumin seeds
2 tsp curry powder
1 tsp dried chilli flakes (or less for mild)
1/2 C water
1 tsp ground turmeric
1/4 cabbage (approx 500g), core removed & shredded
Salt & Pepper to taste
Cook split peas in boiling water for 30 mins or until tender. Drain.
In a frying pan heat oil and add mustard & cumin seeds and cook for 30 secs - 1 min. Add split peas, curry powder and chilli flakes and cook for 3 mins.
Reduce heat to low and add water and tumeric and cabbage. Cook stirring occasionally for 4-5 mins until cabbage is cooked through and most of the liquid is absorbed.
Season to taste and serve.
