Brown Rice Salad

Brown Rice Salad

I love this salad, and it's so simple.

1 C brown rice
6 spring onions, chopped
1 red capsicum, diced
3 Tblsp chopped parsley
1/3 C currants
60g cashews, toasted
4 Tblsp sunflower seeds, toasted

Dressing
1/4 extra virgin olive oil
4 Tblsp light soy sauce
2 Tblsp fresh lemon juice
1 clove garlice, minced
Fresh cracked black pepper to taste
*read the recipe and make sure you do not pour over all the dressing at once*

Cook the rice according to directions on the packet. I used my rice cooker, 1C brown rice + 2C water.

Mix salad ingredients together in a serving bowl, this is best done while the rice is still hot.

Whisk together dressing ingredients and pour half over the salad. Refrigerate and serve cold.

Keep the remaining salad dressing to top up if needed prior to serving. Just taste before you add too much because it can be stronger or saltier depending on the type of soy sauce used.
