Banana Choc Chip Muffins with Cream "Cheese" Frosting (vegan)
Banana Choc Chip Muffins with Cream "Cheese" Frosting (vegan)
Muffins
2 ripe bananas
2 tblsp maple syrup
2 tblsp vegetable oil
3/4C almond milk (or milk of your choice)
1 & 1/2 C self raising flour
1/4 C desiccated coconut
100g dark chocolate, chopped
Frosting (optional)
110g Tofutti Better than Cream Cheese (half a tub)
1/4C vegan spread (I used Nuttelex)
1C icing sugar
1 tsp lemon juice
Pre-heat oven to 200C (390F). Mash the banana and add maple syrup, vegetable oil and almond milk, stir.
Add flour, coconut & chocolate and combine.
Pour into greased muffin trays until approx 3/4 full.
For medium size muffins bake for approx 20 mins, for large muffins bake for around 28 mins.
Serve as is or topped with frosting. To make frosting combine ingredients until smooth and glossy.
